Lemon Juice

Simple Syrup

Rose Champagne

Foam Ingredients

14 parts raspberry puree
4 parts water
2 tsp vegetarian gelatin

Preparation

  1. In a cocktail shaker, combine all ingredients (except the foam and the rose champagne).
  2. Muddle and shake vigorously.
  3. Strain into a chilled flute.
  4. Float rose champagne and foam on top.
Foam Preparation
  1. Fill a pot with all foam ingredients (except vegetarian gelatin) and heat until almost boiling.
  2. Maintain heat and add 2 tsp vegetarian gelatin and stir until completely dissolved.
  3. Strain into soda siphon with soda charges and fill untill 3/4 full.
  4. Place in fridge and chill for approx 3 hours.
  5. Shake and test foam.
  6. If foam has a trace of gas use less charges.
Tips

The foam component and addition of port make this cocktail ideal to pair as part of a dessert course.
