Maple Mule

GREY GOOSE VODKA& MAPLE MULE

ingredients
2 oz. Grey Goose vodka
1 oz. fresh squeezed lime juice
3 drops Fee Brothers Whiskey Barrel Aged Bitters
1/2 oz. Simple Syrup (2:1 sugar to water)
2 headed tbsps ginger & maple espuma

instructions
Ginger & Maple Espuma:
3 1/2 oz. of Spiced Maple Simple Syrup (see recipe below)
3 1/2 oz. of Water (slightly more or less to achieve desired consistency, easier to control and judge than making a runny Spiced Maple Syrup the first time)
1 tsp Soy Lecithin
Combine water and syrup with the lecithin over a moderate heat to achieve desired consistency. Allow to cool.
Blitz with a hand blender or bar whip into a nice frothy, light foam.

Spiced Maple Simple Syrup:
3 1/2 oz. Simple Syrup (2:1)
1 1/2 oz. Maple Syrup
Half a cinnamon stick, pinch of powdered cayenne, pinch of powdered ginger, 2 pinches of cloves, pinch of coriander seeds, 2 pieces star anise.
Combine and stir over heat, bring to a near boil, allow to cool and strain through a fine sieve.

Directions: Into a glass shaker add the Grey Goose Vodka, Fresh Squeezed lime Juice, Bitters and Simple Syrup.
Shake well until cold and strain into a chilled old fashion glass of your choice.
Layer two tbsps of the Ginger & Maple espuma onto the drink.
Smile and serve….
